Capsicum Rice


Ingredients:

  • Red/Green/Yellow capsicum - 2 (medium sized)
  • Cooked rice - 2 cups
  • Gingelly oil
  • Garam masala powder - 1/2 tbsp
  • Salt

Dry roast:

  • Mustard seeds - 1 tbsp
  • Cumin seeds - 1 tbsp
  • Coriander seeds - 1/2 tbsp
  • Channa dhal - 3 tbsp
  • Urad dhal - 2 tbsp
  • Red chillies - 3
  • Pepper corns - 5
  • Curry leaves
  • Roasted groundnut - 4 tbsp

Preparation:

Coarse grind the dry roasted ingredients.

In a frying pan - add oil, cut capsicum pieces and salt and fry for 5 minutes (without allowing the capsicum pieces to become too soft). Then, add the coarsely pounded powder and garam masala powder and mix well.

Mix the cooked rice with the masala mixture and serve hot with fried papadams.
