Brinjal Masala - For Biriyani


Ingredients:

  • Brinjal - 6
  • Onion - 1
  • Tomato - 1
  • Ginger garlic paste - 1 tbsp
  • Turmeric powder - 1/4 tbsp
  • Chilli powder - 1 tbsp
  • Garam masala - 1 tbsp
  • Sambar powder - 1 tbsp
  • Sugar - 1/2 tbsp
  • Tamarind pulp - 1 tsp
  • Water - 1 cup
  • Cinnamon - 1/2 stick
  • Cloves - 4
  • Coriander leaves
  • Salt
  • Oil

Preparation:

In a pan, add oil and heat it. After it gets heated, add cinnamon and cloves.

Then, add chopped onions and saute for 2 minutes. Then, add ginger garlic paste and saute till the raw smell goes off.

Add chopped tomatoes, salt, sugar along with the masala powders and saute until the tomatoes turn mushy.

Cut the brinjal lengthwise and add to the masala powders along with tamarind pulp and saute for 2 minutes. Then, add a cup of water and cook well. Tip: If you want gravy texture, add one more cup of water.

Serve hot with vegetable biriyani or with any mild flavoured rice.
