Ingredients:
- Idli - 8
- Onion - 1
- Tomato - 2
- Ginger garlic paste - 1 tbsp
- Turmeric powder - 1/4 tsp
- Chilli powder - 2 tbsp
- Capsicum -1 and half
- Carrot - 1
- Salt
- Oil
Preparation:
Prepare idlis using idli batter and keep it in the fridge for 20 mins. Cooling the idlis will keep the idli pieces intact when fried.
In a pan, add oil and allow the jeera seeds to splutter. Then, add chopped onions and ginger garlic paste and saute for 5 minutes.
Then, add chopped tomatoes, turmeric powder, chopped carrots, salt and chilli powder and saute until the carrots are half cooked. To that, add chopped capsicum and saute for 10 minutes.
In a separate pan, add 3 tbsp of oil and fry the chopped idlis. Tip: Deep frying the idlis will enhance the taste. Add fried idlis to the vegetable mixture and mix well.
Serve hot with raita.
