Ingredients:
- Small sized brinjal (split length wise) - 8
- Tamarind water - 1 cup
- Salt
- Oil
To roast and grind:
- Onion - 2
- Tomato - 1
- Jeera seeds - 1 tbsp
- Coriander seeds - 2 tbsp
- Curry leaves
- Sambar powder - 2 tbsp
- Grated coconut - 3 tbsp
- Roasted gram dhal - 1 tbsp
Preparation:
Add oil in a pan and saute all the ingredients mentioned under “to roast and grind”. Once it gets cooled, make it into a smooth paste .
In a heavy bottomed pan / kadai, add gingelly oil and cook the split brinjal.
After the brinjal gets cooked, add the masala paste, salt and let it boil. Finally, temper it with mustard seeds and serve hot with rice.
